Pineapple Jalapeno Shrimp Recipe
2 lbs cooked, cleaned shrimp, 3 large (minced) garlic cloves, 1/3 cup yellow onion, 1/4 cup peanut oil, 1/4 tsp dried red pepper flakes, 1 tsp ground coriander, 1/2 cup Lourdes Gourmet Pineapple Jalapeno Marmalade, 1/4 cup coconut flakes, 1/4 cup chopped green onion, 1/4 cup chopped fresh cilantro
Thaw(frozen), rinse and dry shrimp. Heat oil and saute garlic and yellow onion over medium heat until “glassy”, not allowing the onion to brown. Add red pepper flakes, coriander and curry powder. Remove from heat and slightly cool. Stir in marmalade and coconut, and then pour over shrimp, mixing with shrimp.
Refrigerate overnight. On the following day, stir in green onion and cilantro.
