Chimichurri by Lourdes Gourmet

 

3 cups of cooked quinoa
1-2 cups of black beans
1 cup of red and yellow peppers
1/2 cup of sun dried tomatoes
1/2 cup of red onion                                                                                           1/2 cup to of Feta cheese                                                                                    2 tablespoons of Chimichurri

Refrigerate for 30 minutes

Makes a delicious snack, warm or cold
