Grilled Guava Teriyaki Glazed Chicken

Dining Beachside with your main squeeze and a plate of sweet, tangy and spicy GRILLED GUAVA TERIYAKI GLAZED CHICKEN is pretty much the equivalent of surfing glassy peaks with good friends! Happy Independence Day Weekend Peeps!

Guava Teriyaki Glaze/Marinade
2 lbs organic, skinless chicken thighs, rinsed & patted dry
¼ cup Lourdes Gourmet Guava Jam
1 ½ cups low sodium soy sauce
¼ cup Mirin or rice wine vinegar
4 garlic cloves, halved crosswise
1 inch peeled, diced ginger
1 tbs sesame oil
3 tbs Sriracha (or to desired hotness)
1 bunch of green onions, chopped (save some for garnish)

The Deal
Combine and stir in all glaze ingredients in a small saucepan, simmer until rich and slightly reduced. Let cool, reserve a little marinade to baste chicken while grilling. In a large bowl, pour remaining mixture over chicken and marinate for at least 5 hours to overnight. Drizzle with a little oil, toss to coat and cook on a low-medium grill for about 17 to 20 minutes per side or until cooked through. Baste with guava teriyaki glaze for the last 5 to 7 minutes of cooking. Garnish with green onions, best enjoyed by the beach! Missy xo
